![]() Unless the blade gets damaged , the correct way is to use a steel rod sharpener just to keep the edge. Once damaged, a wheel or stone.

![]() This is the one we use and I've seen it used on a lot of charter and party boats as well.... It's super easy to use and a couple of passes every so often as you are filleting keeps knives nice and sharp.

![]() Gerry has a good one pictured which I also use but the trick is not to apply to much pressure on the blade. Nice easy strokes will give you one sharp knife.

![]() My wife likes to cook so I have a WorkSharp belt sharpener. It works on the Shun knives with V10 steel sandwiched between outer layers of milder stainless. The WorkSharp is a home version of a professional sharpening tool. About $90. Awesome but overkill on filet knives.
The Accusharp is as good as anything. I do not like a filet knife that is too sharp and the Accusharp will get it to the right place. My wife does some julienning and will cube meat very finely for meatballs instead of grinding it. |
