Knife Sharpener
A couple of weeks ago there was a thread about knives and which are best for filleting. As a result I went and bought a couple of the Dexter 1378 knives. Found them at a really good price at a restaurant supply place on the internet, about $13 each. My question is what do you guys use for a really good knife sharpener on you boat? I've tried a couple I found at West Marine or Dicks but none of them really sharpen well. I end up bringing my knives home and using a small sharpener clamped in a vise that works pretty good. Any suggestions?

If you keep the angle right an oilstone followed by a leather belt...Charlie

Re: Knife Sharpener
Unless the blade gets damaged , the correct way is to use a steel rod sharpener just to keep the edge. Once damaged, a wheel or stone.

This is the one we use and I've seen it used on a lot of charter and party boats as well.... It's super easy to use and a couple of passes every so often as you are filleting keeps knives nice and sharp.

Gerry has a good one pictured which I also use but the trick is not to apply to much pressure on the blade. Nice easy strokes will give you one sharp knife.

Re: Knife Sharpener
My wife likes to cook so I have a WorkSharp belt sharpener. It works on the Shun knives with V10 steel sandwiched between outer layers of milder stainless. The WorkSharp is a home version of a professional sharpening tool. About $90. Awesome but overkill on filet knives.
The Accusharp is as good as anything. I do not like a filet knife that is too sharp and the Accusharp will get it to the right place. My wife does some julienning and will cube meat very finely for meatballs instead of grinding it. |

They also come in different colors.

Re: Knife Sharpener
On the carbon dexteri' the accusharp works great. On the stainless blades it tears them up.
I use a worksharp on everything now.doesnt get any easier than using that system on any knife |
Re: Knife Sharpener
Carbon steel blades are easy to sharpen and the tungsten sharpeners pictured here might be overkill. The tungsten is great on harder stainless blades. We just switched to the sharpeners that have both the tungsten and ceramic sharpeners. For carbon steel, go very lightly over the tungsten and then switch to the ceramic for a razor edge. Keep things wet. If it can shave the hair on your wrist, you are good to go.
