Default Catch of the Day- a few simple ideas

Use Panko instead of bread crumbs. You can find it in most super markets in the oriental section. Nice crispy flavor!

Tartar Sauce- Mayo, sweet relish, fresh squeezed lemon. Start with a 1/4-1/2 cup of mayo and mix the rest to your liking.

Blackened- Brush with melted butter. Coat with Paul Prudohmes blackened redfish seasoning. Place in "hot" cast iron pan. just a minuteor so on each side depending upon thickness.

Dijon sauce- Make a roux with 2 tbls. butter and 2 tbls. flour. Stir in one cup of milk, stirring till desired thickness. Add Dijon mustard to taste (2 tblsps.?), fresh squeezed lemon. Top finished plate paprika and Green onions or fresh parsley.

I use Panko, Cracker Meal or make my own from Ritz Crackers in a food processor. I also add Old Bay to the Panko or Cracker meal as they are not seasoned.

Regular bread crumbs seem to burn easily, but the Panko is toasted to prevent the burning and gives a real nice crunchy coating.

Love fried flounder done outside on my grills burner....makes the wife happy not to have the cooked oil smell in the house.

I thought I read somewhere that if you put lemon juice in the oil - then it doesn't smell?

I'll try it with lemon, but if it doesn't work, I'll use this board as an alibi with the Mrs. I wish I had one of those built in fryers in the kitchen.....maybe when I add a center isle this spring.

Never heard the lemon thing.

MGM, try using peanut oil. It has a higher smoke point and it doesn't 'hold' odors the way other vegetable oils can.

Simmer some white vinegar(in another pan) after frying fish and should get rid of the smell. Of course you'll have vinegar smell for a brief time

Tried the lemon and oil mixture. Did it outside on the burner because I didn't like the way the lemon juice settled to the bottom and didn't want to try it inside.

Basically, lemon juice boils faster than the oil and when it does, presto! Mt. Vesuvius.

If you try this in your wife's kitchen, you won't be gettin' any for a month.

Try using Potato Buds (instant mashed potato in a box) instead of bread crumbs. Nice crunchy coating with potato flavor.
