Default Float Trip Advice

Starting to do some research about a trip Id like to take with my step dad. Looking for some advice/ideas. So heres what I got. Id like to float the upper delaware water gap or the section in NJ. My partner is about 65 and has some health issues but nothing to crazy. I have a 16 foot scanoe with a 30 pound thrust electric out board(would you even bring it?) Im thinking yes just so I can go over spots more then once. Ive floated the river up by barryville a bunch of times but never a overnight trip. Id like to set it up where we float camp float again then leave. I see in nj you can use campsites along the river free of charge with a minium distance traveled on the river. Im looking for info on best ways to do it. Where. WHEN. My basic idea is park a car at the starting and midway camping point. Have the camping gear in the midway car. Get there set up then the next day pack up and move the car from starting pouint to the end and float the remander of the trip. I realize alot will depend on us and conditions etc but any suggestions on distance per day? 10 miles7 hoursish I figure? I like to fish small mouth on the river so I prefer to go when they are in season. And wherever I camp Id like to set up for cat fish at the camp site. Any ideas/advice/suggestions are greatly appeciated.
