Bonita Parmesan

Now that it's that season, I'll share a real easy one pan dish. Take a bonita fillet, dip in flour, egg wash, and seasoned bread crumbs and then pan fry for a quick minute on each side. Take the fillet put it on a paper towel, wipe the oil out of the pan and put the fillet back. Cover it with spagetti sauce, shredded mozzarella cheese and cover the pan and heat just until the cheese melts (only a minute or two). Fish haters will swear it's chicken ! You'll want to go catch more bonita !
