Default Easy Striper Recipes

Mustard Fried Striper

This recipe is easy and uses ingredients most of us should have on hand in our kitchens.

• Striper fillet
• Mustard for coating fish
• Tabasco
• Cornmeal for coating fish
• Oil for frying

1. Cut fillet into serving portions. For this recipe, I prefer cutting the fillet into finger sized servings since they cook faster.

2. In a bowl, combine mustard and tabasco to taste. I use Gulden's with this recipe, but dijon or yellow mustard works well too. Coat fish with mustard.

3. Next, coat the fish with cornmeal.

4. Fry. I use peanut oil for frying fish since it doesn't absorb flavors the way other oils can.

The nice thing about this recipe is you can easily adjust the 'kick' to suit your taste.

Spicy Broiled Striper

Marinade:
• 1/4 cup OJ
• 1/4 cup soy sauce
• 2 TBSP asian chili oil
• 1/4 TSP pepper
• 1 TSP lemon juice
• 1 clove crushed or chopped garlic

1. Combine ingredients and marinate fish for 1 hour, turning once.

2. Place fish on buttered or oiled broiler pan.

3. Broil about 4" from heat for approximately 10 minutes, turning once.

Note: This marinade works equally well if you prefer to grill your fish.
