![]() This is a great refreshing apetizer for a hot summer day.
1lb fresh sushi grade ahi tuna 1lb smoked Watermelon (see below Cold smoked) 1 avocado peeled and sliced 1Tbsp sesame oil Fresh Cilantro and sesame seeds for garnish 12 Store bought mini taco shells Directions: To smoke watermelon heat smoker to 90 degrees(don't let get any hotter) I like to use hickory chips with coal for this and place watermelon slices(leave the rind on for smoking cutoff and discard after) in smoker for 4-6 hours depending on preference. Dice raw tuna into 1/4" dice and put into bowl and combine with sesame oil, Then take watermelon and cutoff rinds and chop rest into 1/4" dice as well. Take taco shells and layer tuna in bottom then watermelon then top with avocado slices. Finish by sprinkling with fresh chopped cilantro and sesame seeds, serve immediatly. Goes great with a cold margarita on a hot summer day. Enjoy! |

I like to do the same but enjoy to make the tuna ceviche style!! YUMMY!! What kind of smoker you using? |
