Default Panko Fried Crappie/Roasted Pepper sauce

Went fishing for Crappie today at Turkey Swamp.

Never had Crappie but LAB said they were on the money so I tried them. Awesome is all I can say.. Here you go. Made this one up on the way home.(Killer though)

You can do this in one pan.

Recipe for Panko encrusted Crappie.Serves 3

4 large Crappie Filleted, Scaled all bones removed Skin on.

1/2 cup Panko Crumbs
1cup Conala oil
1 Lg. Egg
1/4 cup flour
1/2 tsp. Salt

Dredge flesh side of fish in flour
Beat egg and dip fish in egg flesh side
Coat flesh side with panko
Be careful not to coat skin side.
Set aside.


12 Shitake mushrooms
1 bag Spinach
2 small baking potatoes
1 12oz bag of baby Spinach
Half roll paper towels



Roasted pepper tartar sauce

1 Roasted Pepper(jar is OK)
1/4 cup Mayo
1/8 cup sweet relish
1/2 tsp chile powder

Blend all above ingredients together in blender briefly.

1) Heat oil in large non stick pan
2) Slice baking potatoes on hand held grater/slicer in hot oil
3) Cook till crispy. Set aside on Paper towels to drain.
4) Keep oil hot and add spinach cook 2 minutes, WATCH OUT! OIL WILL SPLATTER. Drain on paper towels. Set aside.
5) Drop mushroom caps in hot oil till golden brown. Set aside on paper towels.

6) Keep oil hot and put fillets in hot oil. flesh side down. Cook 5 minutes
7) Flip over and cook on skin side till skin is crispy.
8) Drain on paper towel.

Serve as shown in picture.
