Short crew trip today, the mate's brother came into town, so we went exploring. No Spanish mackeral yet, 1 bill wrapped sail and look what bit a guppy rig in 180 feet of water with no wire!! He's got an appointment with my smoker this weekend !

Rich, regardless of the fish used I make my spread using ricotta cheese. It’s not runny like a mayo or sour cream. And, I don’t care for cream cheese.
After I smoke the fish, I use a food processor to make little pieces out of big chunks of fish. I’ll smoke it pretty dry too. Mix the cheese and fish together, add a bit of mayo to thin. (Table spoon or two) Add pepper and old bay seasoning to taste. |

I always use sour cream, I'm going to have to try the Ricotta cheese trick. (Will probably make two batches for New Year's Eve.) Thanks !

Salty- tried the Ricotta cheese, liked it best when I mixed it with sour cream 50/50 with a dusting of garlic powder on top. thanks--Rich
