I'm a big fan of my Dexter. It's gotta be 15 years old by now. A few swipes on a sharpener once in a while keeps it razor sharp.

I use my Henckels boning knife.. It looks to be about 6 inches.
As far as sharpeners it's hard to beat Chef's Choice. It makes a perfect edge. Chefs Choice has several models but my 100 model with 3 sharpening stages works very well Last edited by briansnat; 01-01-2015 at 09:26 PM..
