P.U.O.S.U. Panko Blackfish with Orange Beets and greens


Made this one last night for Leif and I. Judith Dear was working so I thought I would be a great time to enjoy the one Black fish Leif caught on the special NJ FISHING P.U.O.S.U trip.

Ingredients

2 Medium Black fish fillets
1/4 cup instant flour
1/2 cup Panko Crumbs
1 egg beaten
1/2 cup canola oil

2 med fresh beets with tops
1/4 cup olive oil
1/4 cup orange juice
2 tablespoons chopped parsley
1 teaspoon chopped chives
Orange zest for garnish

2 Medium Baking potatoes

The Beets

Clean beets and slice about 1/4 in thick
Coarsely chop Beet greens removing stems
Put beets and greens in a 2 quart microwave container
Microwave on high for 7 minutes until beets are tender

Combine olive oil, orange juice, parsley and chives in small bowl and mix.
(pour over beets when serving as shown)

The Potatoes

Wash potatoes, poke with a fork and microwave until done. (use the sensor if you have one, they work great) If not, it takes about 7 minutes for 2 med. potatoes at 1000 watts.

Let cool briefly and cut in quarters, fry in canola oil till crispy.

The Fish

Coat the fish in flour
Dip in the egg
Coat with Panko
Fry in canola oil until golden

Enjoy!!
