I find this thread very interesting... I am going black drum fishing in few weeks out of Cape May.
There are some big black drum over there during the month of May.
I do like to eat my catch

So what do you consider drum fish that is too big to eat (tastes bad)?

Does it really taste bad?

What if I pan fry the fillet or bake the fish with garlic, ginger and teriyaki sauce?
I usually bake stripers or cod like that...

I fish for black drum all the time around LBI. I am also going to be going to Cape May in May to fish for the larger Black Drum. From what I know they are very good and that all on my friends love them but they do not eat the really large ones. Many of the Black Drum have worms in them but if you find them just cut that peice out. Most of the ones I catch are in the 20 to 30 pound range. I was just looking for another way to cook them. Good luck in Cape May and who are you going with or chartering their. When I go to fish there I go with Off Duty. Capt. Joe is a great guy and does very well with Black Drum and Stripers.
