Get the dexter. It's high carbon. It's not stainless so what I do is coat it in oil with a paper towel when I'm done. Vegetable oil not motor oil

Looks like the 9" Dexter is the way to go. Why not the "Sani safe" plastic instead of wood handle?

Dexter wood handle 9" I tempered it by beating the blade to red hot then rub vegetable oil on it 22 years ago
