Knives of Alaska I have both the Coho and the Steelhead, just because I was given a gift cert for cabelas, nice knives

Get the dexter. It's high carbon. It's not stainless so what I do is coat it in oil with a paper towel when I'm done. Vegetable oil not motor oil

Looks like the 9" Dexter is the way to go. Why not the "Sani safe" plastic instead of wood handle?

The sani is a stainless steel blade, and doesnt sharpen as well with the accu sharps most guys use.

The wooden handle is a carbon blade that is very easy to sharpen with an accu sharp

Dexter wood handle 9" I tempered it by beating the blade to red hot then rub vegetable oil on it 22 years ago
