Can't go wrong with daiwa tanacoms. The 750 or 1000 are plenty. There are smaller models but we used the 1000s and had tiles over 50 lbs on them.

For rods, we used Bogan custom eglass rods, roughly 8 ft, straight butts, off my dad's private boat. We used adjustable outrodders to keep a horizontal angle to the water, slightly angled up and just watched the tip bounce. Once bit, flip the switch and elevator up!

For party boats, I'd get a longer foregrip for rail leverage and maybe opt for the smaller 750 to cut back on weight and angler fatigue.
