Default Prosciutto Wrapped Cod w/ Lemon Caper Butter

Made this recipe last night & it was unreal.

2 Tablespoons Butter (softened)
1 Tablespoons drained capers (minced)
1 Teaspoon grated lemon zest + 1 Tablespoon lemon juice
1 Garlic clove (minced)

2 Skinless cod filets
4-6 slices Prosciutto
1 Tablespoon Vegetable oil


1) Adjust oven rack to upper middle position & heat oven to 450 deg. Using fork, beat first 4 ingredients in a small bowl until combined.

2) Pat cod dry with paper towels & season with pepper. Spread butter mixture over top of filets. Working with one filet at a time, slightly overlap 2 slices of prosciutto on a work surface. Lay cod (butter side down) in the center of the slices, then fold prosciutto over fish. Repeat with remaining filets.

3) Heat oil in a large ovensafe nonstick skillet over medium high heat until JUST smoking. Add prosciutto wrapped filets seam side down & cook until browned, about 1 to 2 minutes on each side. Transfer skillet into oven & bake until ends of fish flake when gently pressed (about 8 min). Transfer filets to individual plates & spoon any juices from skillet & serve.
