Found this recipe online so I won't take credit for it...Slightly modified and tried it last night; it was incredible...Tasted like BACON...leftovers in the morning were even better...try it and you may actually like bluefish...
4 5-oz. skinless, boneless bluefish fillets (remove all dark meat) Freshly ground black pepper to taste (no salt as bacon contains salt) 6-8 slices bacon (I used THICK CUT Hickory Smoked Bacon) Dried Thyme leaves (add sprig to top for aesthetics if you wish) Teaspoon of Lemon Juice Splash of white wine (Chardonnay) 1. Heat oven to 425°. Season bluefish generously with thyme & pepper. Wrap each bluefish filet crosswise with 2–3 strips bacon and tuck two sprigs thyme (if used) in between the bacon and each filet; set aside. 2. Drizzle fish with lemon juice and white wine bake/roast until filets are cooked through and bacon is crispy, about 12-15 minutes. Set oven to broil to crisp bacon, if necessary. ![]()

i love bluefish as is! but moe and my 1 aunt hate it if i ever see one again i am gonna try this out for sure

I gotta say that looks awesome. I really dont eat bluefish at all but I def would try that!

Ray Burke/Mad gaffer says that if you bleed the bluefish immediatly after catching, it helps a lot. Also another guy told me that when you fillet them, throw the fillets into a container of slightly salted water. A lot of oil comes out of the meat. Martin, the photos dont lie. Great looking dish

Take your Blue Fish Fillets and cut the red line out, then put the fillets in a bowl of ice water with 3 table spoons of lemon juice. Let soak for 30-45 min
Takes all the strongness and oil out. |
