In my opinion they taste good when fried, but only if they are young carp around 1lb in size (usually 16" or so.) Then they have a decent sweet white meat flavor. When they get old like that, they taste horrible haha.
Too bad most of NJ carp habitats are heavily polluted rivers anyway.
