My favorite fall recipe.....
It's that time of the year again. My favorite recipe for the cure alls (wife and children at times) Select type to your liking, add yeast and favorite wood chips for flavor and finish . Wait 10-14 days and check with hydrometer. Rack and stir to remove gases and sediment. Let sit , sip to test potentcy(again and again). Wait a bit longer. Bottle and drink. Here's to the fall harvest-Salute!

Glad to see someone else likes the hobby of making the fall brew. I just bottled 5 Gals. of White Zinfandel and 5 Gals. of Sarah.
Still have 5 of Peach and 5 of Dandelion to bottle yet. No I don't drink it all,just a fun hobby. Give most of it away as gifts and take it to parties and such. |

I'm getting ready to rack 65 gallons from May (Malbec grapes from Chile) and my buddy and I also have 65 gallons of of a blend of Sangiovese, Old Vine Zinfindel, Carignane, and White Malvasia. Just in time because 2007 Malbec is running out. Definately a fun hobby.
I just started the Prosciutto Di Totowa. 23# bone in pork butt in the garage all salted down for the next 30-40 days. Rinse and hang to dry until next Christmas. As the only Mc in the group you can't imagine all the wannabe shyte I have to put up with.

Kudos to the winos!
I take a different tack- I just bottled 5 gallons of homebrewed IPA, that should last me for a little while. Right now, I'm drinking the last few bottles of my Irish Oatmeal Stout. Yum.

Usta do a fair amout of home brewing back when...A big batch for me was 15 gallons so my hats off to you maniacs cooking up 65 gallons! where the hell do you keep it all? When I was brewing I got all my raw materials from Hop & Vine in Morristown but they are long gone. Where do you get your stuff now?

Corrado's in Clifton has everything you need. My buddy put an addition on his house and instead of a crawl space he went down 8' and made that his wine cellar. We have 2- 59 gl. oak barrels and a bunch of various sized demi-jons and a 250 litre stainless tank with an air bladder top and spigot on the bottom. Final rack goes in the tank and we take it out as needed.
