In the kitchen or on the boat?

Boat: carbon steel dexters

Kitchen: wustoff classic, henkel or shun Damascus steel.

They can range from $100 to $1500+ for a set of primo knives...

Why do you need a set? I have a Cutco that works on everything.
My buddy has a Dexter that he uses for everything as do most of the mates who use the same knife every day.

Use different length for different fish. I like using a shorter blade for say Seabass, Cutting Stripers I use a beefer blade to start up by the head. ECT..

It would be the Rapala NK03039-BRK Fish N Fillet. I bought one for myself and another as a gift and we both love it. I'm now using it for almost everything. You will NOT be disappointed with this knife.
