Default Fat Albert Recipe???

My son Trey, 6, caught his first fat albert today in Victory at Sea conditions on a Stingo out between the channels. Naturally he wanted to keep it (despite my suggestion he release it!). I bled it, put it on ice and it's all filleted up in my fridge. Now what??? Any recipe suggestions? Only other time I tried cooking one did not go so well...

BTW, we saw an 8-point buck swimming in the channel in the Shrewsbury this morning presumably trying to get to an island!!!

Soak it in well salted water for a day, rinse it and boil it until cooked through...Use it as you would canned tuna after chilling it... Mayo, celery, onions etc.. There are other methods, but the "tuna fish clone" works pretty well... They are quite strong. bob

Anything that takes that much effort to hide it's natural taste was not intended for human consumption! I'd do everything Bulletbob suggested but then feed it to the cat. If you don't have a cat, find the 8 pt buck you saw swimming across the Shrewsbury this morning and feed it to him, he was probably hungry and looking for something to eat!

Recipe #2: Bury the albie in the garden, buy a nice white filet at the store and hope he never wants to keep another one

Recipe #3: Cook it any way you think may be good and make him eat it all. Hey, He may like it and all is good

Awesome fish to catch and watch swim away...you have to have the stomach to eat em. Some folks like em and that is what makes us all different.

Recipe 2 sounds good to me

another good way to cook strong fish after soaking is to bake it in tomato sauce, with onions and garlic... You really need to cut the taste, thats why the tuna salad thing after a soak, and tomato sauce, bake.. Try those two things- you may enjoy it... bob

The best way is..

Get your fillet all seasoned up.. Butter, garlic, etc..
Put it on a cedar plank and grill for 20 mins.. Flipping it every 10
Let sit for 5 mins then scrape off the fish and eat the plank

Its too late now but next time try it sashimi on the boat. It's really decent. Not as good as BFT but worth a taste.
