Default Tortellini Soup

Nice one to try and it's easy

RUSTIC ITALIAN TORTELLINI SOUP

1 PACK Jeno Italian sweet turkey sausage
1 med onion chopped
8 cloves garlic minced
2 cans reduced salt chicken broth
1 cup water
3/4 cup zin wine
2 35 oz cans of diced tomatoes
2 9 oz refrigerated cheese tortellini
3/4 tbl basil
3/4 tbl oregano
1/2 tsp pepper
1 dash crushed red pepper flakes
2 6 oz packs of fresh coarse chopped spinach
2 tbl franks hot sauce

cook sausage in frying pan until brown - I start with water and
finish with a little wine for the browning process

place a couple of til olive oil in large pot over med heat add garlic
onion, when onions look opaque add water, broth, wine, diced tomatoes wth the juice. Slice the sausage in thin slices then toss that in the pot.

Bring above mixture to a boil the add the tortellini and cook until
tortellini is tender.

toss in the spinach, basil, oregano, pepper, crushed pepper and Franks sauce and cook until spinach is wilted. Serve with fresh shredded parm cheese if desired.
