Seen this chef many times on WFN. He always uses simple fresh ingredients and doesn't complicate things which I like.

I have done this with seabass and it is very nice. Key is coarse sea salt and high quality extra virgin olive oil.

I do it with fluke, sea bass, porgy and striped bass. You can do crudo with sea salt, lemon and olive oil or you can do with ponzu sauce for a more asian flavor.

Gotta love crudo, raw sliced fluke. You can put any type of dressing you prefer and its great
