I don't know about Monmouth County but there is a knife sharpener who comes to the West Windsor Farmer's Market every Saturday morning. The market is open from 9 to 1. It is also a good place to pick up veggies.
The market is at the Princeton Junction train station parking lot on Vaughn Drive.

Buy a work sharp and do them yourself.
It is crazy simple to use and getting a razor edge on any knife is easy.
and once sharpened the touch up the blade takes less than a minute
