Default Sesame Teriyaki Fluke

Here is a recipe that is easy to make. It combines teriyaki sauce and BBQ sauce, with the barbeque sauce holding the flavor of the lighter teriyaki while marinating, and the sugars from the BBQ sauce caramelizing both flavors on your fluke when grilling. I included this in a cooking article that I wrote for the Fisherman a few years back. With fluke fishing hitting its stride, I thought that some members might like to give this a shot. We did tonight and I had forgotten how good it is!


Sesame Teriyaki Fluke (Serves 4)

Filets from 2 fluke
½ cup of teriyaki sauce
½ cup of thick BBQ sauce
3 tablespoons of sesame seeds
1 sealable freezer bag

Wash and separate fluke filets so that you have 8 pieces of fish. Place in freezer bag and add sauces. Seal bag and work marinade around fluke with diligence. Refrigerate and let soak for up to 6 hours. Place fish on pre-heated grill over low to medium heat. In small frying pan, cook sesame seeds and set aside. This marinade will stand on its own, but if want to go heavy on the flavor, blend extra teriyaki and barbeque sauces and brush on fluke when grilling. Flip filets with wide spatula once, and remove from grill when fish begins to flake. Top with sesame seeds and enjoy!
