Went to school in Buffalo back in the early '80 and they used to deep fry the wings and then toss them in a melted butter and cayenne pepper sauce. I prefer to grill them and make the sauce basically the same way although I don't discuss it with my cardiologist. Lately I've been also adding some Old Cape Cod Smokey and Spicy Chipolte sauce to the cayenne pepper sauce (I'will also tone down the bad stuff by replacing half the butter with Smart Balance...sometimes).
Got a forty pack of wings defrosting on the counter right now as a matter of fact. I like to get some family packs from Costco and cut them up (I throw away the wing tips but some people leave them on) and then freeze them in bags of 20 or 40.
