My wife likes to cook so I have a WorkSharp belt sharpener. It works on the Shun knives with V10 steel sandwiched between outer layers of milder stainless. The WorkSharp is a home version of a professional sharpening tool. About $90. Awesome but overkill on filet knives.
The Accusharp is as good as anything. I do not like a filet knife that is too sharp and the Accusharp will get it to the right place. My wife does some julienning and will cube meat very finely for meatballs instead of grinding it.
