Lightbulb Simple fried fresh caught catfish

What you need:
Catfish fillets
vegtable oil
McCormick or Zatarans fish fry (not beer batter)
milk (optional)
http://www.upfishing.com/cleaning_catfish.html this is my favorite way to clean small catfish and bullheads (for bigger ones, skin them with pliers.) after doing either method, seperate meat from the bone as you would any other fish to get boneless fillets. rinse them and, if the water you caught them in was dirty and/or warm, or for bigger fish, soak them in milk overnight in the fridge. it will get rid of the dirty taste.

when ready to fry, make sure fillets are wet (to make the fish fry stick) and dip/rub dry fish fry mix until all fillets are evenly coated. fill 12 in. frying pan with 1/2-1 inch of vegtable oil. heat on medium high for 7 minutes. slowly place fillets in pan and cook each one for about 3-5 min. on each side (depending on size, cook longer if bigger) or until golden brown on each side. put on plate with napkins or paper towels and serve with lemon wedges. enjoy
