Default Re: Paella

This is the way we made it the other nite. As you know there are many variations and other things you can add. This recipe is for four.

2-Tbs. olive oil
3 - cloves of garlic
2 - tsp.dried oregano
SALT & pepper to taste
1tsp.red pepper flakes
2 -cups of spanish rice
1 bay leaf
1 quart chicken broth -- I use low sodium if I'm using alot of seafood
1-onion chopped - i like spanish onion

Heat the olive oil in a large 10' fry pan or paella pan,(well worth the money)
add the onion, garlic, pepper flakes, oregano, bay leaf & salt & pepper. Saute for a few min. then add the rice, coat the rice w/ the olive oil then add the chicken stock.Bring it to a boil, the turn it down to a simmer for 20 min.

Then add shrimp, clams, scallops, firm fish cut into 1 in. cubes. Cover with lid or aluminum foil & simmer till seafood is done.

Some different variations: Chorizo (cook in onions & stuff in the first step)
Chichen ( again w/ the first step) Other things I have added are, saffron, chopped red and, (or) green pepper, chopped fresh parsley.
You can use uncooked short grain white rice in place of the spanish rice.

If any one has any other Paella or seafood Stew, I would sure like to see them.
