Had one of those big blues this way. Took the fillets trimmed back the brown nasty stuff. Used Lemmon Pepper spice mix on the fillet grilled pretty quickly, dont over cook. When cooked cut the fillets in strips. Placed strips over cut tri-color salad mix, a little bit of fresh grilled corn kernals and placed into a flour tortilla. I topped with just a little creamy balsamic dressing. It was excellent.
