Broiled Mackerel Split/bone in

One of the easiest ways to cook fish is broiling. It is also one of the best ways to ruin fish if you over cook it.

Before you get started here are important tips.

1)Heat the BROILER AND PAN so it is red hot. When the fish hits the pan on the foil it will start cooking immediately.
2)Make sure the fish is not too cold; Leave it out for a half hour or so.
3)Cook as close to heat/flame as possible without starting a fire
4)Do not over cook. The fish should be done in about 7- 10 minutes at the most or until it is golden brown and crispy on top.


2 medium Mackerel/ Head and tail removed and gutted
6 small pats of butter or margarine
Paprika, Salt, Pepper

Pre-heat broiler for 10-15 minutes and broiler pan.
Split the Mackerel down the backbone to open up the fish
Place fish on foil salt, pepper and paprika and dot with butter.
Place fish on broiler pan and broil for 7-10 minutes or until golden and crispy.
The bone will lift right out and the meat will be moist.
