Pickled Mackerel
 
Pickled Mackerel

4 Medium Mackerel
1 Large Spanish (yellow) Onion
2 Bay Leaves
4 cups water
2 cups Distilled White Vinegar
20 Whole pepper corns
¼ cup sugar

1) Remove head, tail and gut mackerel cut in thirds (chunks)
2) Thinly slice Large Spanish Onion
3) Combine Bay leaves, water, vinegar, pepper corns, sugar. Bring to a boil in pot.
4) Add Mackerel chunks, bring back to a boil add onions and simmer for 5-7 minutes.
5) Let cool and place layers of fish, onions and pepper corns/bay leaf in Mason Jar.
6) Cover with liquid
7) Cover and let sit in the refrigerator for a day or two.
8) Enjoy

My Dad taught me how to do this when I was a kid with Mackerel. I still enjoy it. It is easy and you can eat it cold. The bones come right out but be careful.
