Fluke Ceviche

Cut fluke filets into ~.25" thick sashimi slices
Season with salt and pepper
Chop onions
Slice up some grape tomatoes and jalapenos
Dice some fresh garlic and fresh herbs (I like to use cilantro or parsley)
Squeeze the juice of one whole lime (maybe more depending on size of batch)
A little bit of olive oil (maybe half a tablespoon to a tablespoon)
Mix ingredients and let sit for a few hours refrigerated.

I like to dip it in soy sauce and eat it or scoop it up with a cracker. Sorry my ingredients aren't precise I kind of just go with whatever I'm feeling like.
