Tile Fish Recipes???
 
any ideas guys i got a sh!t load of fish...thinkin of trying a chowder with it or just bake/broil it....any ideas please..

If you slice the fillets thinner, they hold up very well when fried to make incredible fish and chips.

Also, grilling them in a foil pouch with lemon, butter, and adobo seasoning.

If neither of those are your style, they are also a thick enough meat that they make a very good fish taco meat. Stack the taco with the meat, red cabbage, and guacamole (or sour cream/salsa).

I limited out on tiles when I vacationed in NC and got a chance to try all 3 of these ways to cook them. All three worked well.

I caught some tiles on June. They taste great. My favorite way to cook them is to cut the fillets thin (about like a large fluke fillet) dust with flour, saute in butter and olive oil, remove from the pan and make a picata sauce, add back to the pan to rewarm for a minute and serve.

Picata sauce
3 tbs butter melt in pan
Add chopped shallots or onions soften 2min
add chopped garlic saute 1 min
add a dash of cayanne pepper, salt & pepper, some white wine, lemon juice, and capers and saute a minute or two to get the right thickness
Add back fish, fold sauce over fish and warm for a minute and serve.
