Going to try smoking a striper for the first time tonight.
 
Hopefully I don't get addicted! :D



Trying out a basic brine on the first site I saw online. LOL :o :

1qt water
1/2 cup non-iodized salt
1/2 cup sugar

Let sit for 6 hrs, going to try a mesquite flavored woodchip over a light heat from a charcoal grill. Here goes nothing. Wish me luck.

I would replace the sugar with brown sugar. gives it some color and more flavor

Dan here is a fast way if you do not have time to brine, or space in the fridge. for the brine.

Mixture

2 Tbs Onion Salt
2 Tbs. Garlic Salt
2 Tbs. celery Salt
1 Tbs. Sea Salt
1 Tbs. Lemon Pepper

Sprinkle on both the meat, and skin side of the fish 1 Hr. before smoking.Flake off excess salt before smoking.

I did Turkeys years back this way

I forgot to post the results. It didn't come out bad. Had a nice smoked flavor but felt like it was missing something. I also wish I could've smoked it for longer.

Steve - That's what my girl and I were thinking. We'll try that next time.

Tropics - I'll have to try that.
