Codfish over baby spinach with roasted red pepper and tomato puree
This meal take about 4 minutes to make. Put this together last minute with whatever Judith Dear had in the fridge and cabinet. Came out really good. Almost looks and tastes gourmet. Ingredients 1/2 lb cod loin 1/2 cup roasted red pepper and tomato soup 1 small bag baby spinach 2 pats butter or margarine salt and pepper Directions Steam cod in a microwave safe container for 2 minutes steam spinach for 2-3 minutes in microwave safe container Heat 1/2 cup of roasted red pepper/tomato soup Drain spinach and place on plate Place drained cod on top of spinach Top with soup butter and salt and pepper to taste Enjoy! That does look very good! I'd scratch the microwave but, in a pinch i'd definitely make this.
