Blackfish scampi
 
Cut three blackfish fillets into 1" cubes.

Bring to a Boil 1 quart of water with 8 tablespoons of brown sugar in it.
Add blackfish cubes and bring back to a boil for 5 minutes.

In skillet melt 1 1/2 sticks of butter, fresh garlic, old bay seasoning, montreal steak seasoning, italian seasoning and seasoning salt to taste.( I sprinkle each seasoning on top of unmelted butter till just covers it)

remove cubes from water and add to skillet for five minutes on low.

Make rice and spoon mixture on top.

Less than 10 minutes and its awesome !!!!!!!!!!!

I tried this and it was great..best part is its easy because I can't really cook..my 6 year old daughter asked when I'm gonna make more.

Had it last night,very good. Have to try the chowder next. Hope racks will be plentiful on the Star next week Wed. or Thurs. Merry Christmas to all,Jim.
