Sashimi those Albies
Tried one of Albies Sashimi style and was pretty dam good. Bleed and ice the Albie as you would one of those precious other tuni. Trim all the brown soft stuff off down to the red meat. You will wind up with 4 somewhat skinny loins. Slice your pieces against the grain like the bigger tuna. A little wasabi dip with soy and some pickled ginger on the side. Enjoy.
