Mackerel Cakes
 
Mackerel Cakes

1 lb steamed skinnless and boneless Mackerel
1 medium onion, diced
Dash of salt
6 medium sized potatoes, boiled & mashed
2 eggs
Dash of pepper


Mix all ingredients together. Drop by spoonfuls into hot canola oil. Fry until brown on both sides.

I use a similar recipe for bluefish and it comes out very good. With the blues you boil them and separate the red flesh (blood line) from the rest. You could substitute instant mash potatoes to makes it quicker. It makes me think that this recipe is for what some would consider less palatable oily fish, but hey I like blues.

I like the instant potato idea. I have made these with bluefish and they were good!

I make fish cakes all the time, usually with bluefish, and I never used instant potatoes. But it seems like a good idea.
