Whole pig marinade
 
We did our annual pig on the beach yesterday and as usual we had the pig in a marinade for about 60 hours. 80 pounds on the hoof and about 65 pounds dressed. We put the pig in a very large plastic bag, add the marinade and cover it with ice. We cook it in a 'caja China' that we got from Florida. We have the pig butterflied. Takes about 4 and 1/2 hours. It was as always, very delicious!

Marinade is one gallon of orange juice, 1/2 gallon of lemon juice, 1/2 gallon lime juice, a bunch of fresh oregano, 5 heads of garlic cut up and a lot of black peppercorns. My son does inject some of the marinade in the shoulders and hams.
