Fillet knife
Looking to pick up a filet knife for use in salt or fresh water. I see knives from $10 to $200. What do you guys use, and why? Does size really matter :confused:? I suppose a sheath is handy, but most are leather. Leather gets AFU by salt water, no? Thanks for the input...

Sharp is all that matters. It's what you buy it for.
Is $10 sharper than $60? Does it keep it's edge inexplicably longer with a wooden, plastic or rubberized handle attached? That why we pay $400 for a cooler to save $10 in ice. The salesman got you. |

dexter 1378, 1376 and the plastic sharpener, Fishermans Supply in PP, go with the thinner, 2333/2223? if you use for fluke/ling/seabass, go with the wider 1378/76 for blues/striper/cod. Carbon steel will rust so keep it dry and try soaking it in apple cider vinegar BEFORE using it. I have had a few for 20+ years.

Get the dexter. It's high carbon. It's not stainless so what I do is coat it in oil with a paper towel when I'm done. Vegetable oil not motor oil:)

Looks like the 9" Dexter is the way to go. Why not the "Sani safe" plastic instead of wood handle?

Dexter wood handle 9" I tempered it by beating the blade to red hot then rub vegetable oil on it 22 years ago

you must be a fishing newbie so get yourself several different filet knifes and find the best for you. The fishing flea markets in the winter is best time to buy from the knife guy

No reason to heat carbon blades, the steel needs to develop a "patina" either with use and care or a "forced" patina. You can as suggested soak in vinegar or use things like a brief coat of mustard to force a patina and then wash off and care for as any other carbon steel knife.

Dexter 1378 is the best filet knife for any type of fishing. I'm a deckhand and through my experience, it is the best knife for anything.

Why do all the mates use the wood handle carbon Dexter? Because it is the best knife for doing the job,cheap, and easy to sharpen. The white plastic handle ones are for butcher shops and sanitary reasons. I even butcher deer and cut my stakes with my Dexter wood handle.

Don't waste time with bubba blade dulled quickly dexter Russell with wood handle best holds edge better than stainless
