you must be a fishing newbie so get yourself several different filet knifes and find the best for you. The fishing flea markets in the winter is best time to buy from the knife guy

No reason to heat carbon blades, the steel needs to develop a "patina" either with use and care or a "forced" patina. You can as suggested soak in vinegar or use things like a brief coat of mustard to force a patina and then wash off and care for as any other carbon steel knife.

Dexter 1378 is the best filet knife for any type of fishing. I'm a deckhand and through my experience, it is the best knife for anything.

Why do all the mates use the wood handle carbon Dexter? Because it is the best knife for doing the job,cheap, and easy to sharpen. The white plastic handle ones are for butcher shops and sanitary reasons. I even butcher deer and cut my stakes with my Dexter wood handle.
