I keep a lot of trout throughout the year. It's a put and take fisherie through most of our NJ streams. Many of my keepers are used for striper and flathead bait but the rest are cleaned and frozen for future smoking. A good friend told me to try a new grill/smoker. The Big Green Egg can be found locally(hunterdon) and it does a fantastic job.. (this is not a paid endorsement:cool:) btw: a smoked 26 in brown is a meal to die for:D I'm sorry for all of you who've never had the pleasure of trying one.... haha

Wilson turned me onto the Apllewood for trout, never looked back after that :)

That Big Green Egg is something every man should own. A couple friends of mine have it. It's a smoking, cooking machine. I need one. As for the Trout, I say smoke em if ya got em. The state will make more, no worries.

I'm getting ready to smoke mine too as soon as I get a weekend without the wind! Do have have a special brine recipe to share?
