I was waiting for this!

Do you think they'd make a good cerviche? I use fluke for it. Judging by your input that it's better than flounder I can only assume it'd make for a decent fluke substitute.

I can only say that it will make a delicious ceviche...but you might want to wait a few weeks to hear from me and my cousin if that raw prep gave us any "guests" lol. I think it's unlikely, I candled the fillet and didn't see any critters!

Lol jesus. I hope for your sake no guests arrive to your party hahaha...

We get them out east during early fluke season. We've always tossed them back or stripped them out for bait. Looks like a few might come home next season!

Oh, I also did your tog marsala. It was killer. See below... my sauce broke a bit unfortunately but it was still stellar. Keep em' coming!

Wow that looks great!

I reduced the liquid down to a syrup before mounting with butter...but you know what they say: sauce might break, flavor doesn't!
