That looks good. I'll try it. One thing though I think presentation would be better with the fish on top of the sauce.

True, though sauce over is the "traditional" way, with the head and tail poking out on either side. Need a smaller porgy next time to retain the tail, or a bigger pan!

Besides, I bet one of your short fluke will hide nicely under all that sauce
