Default THE best ceviche recipe

Made it with sea bass:

1# sea bass filets, fresh
1 cup lime juice
1/4 onion, sliced

Marinated the fish in lime juice and onion for 25 minutes. Drained well, then added:

1/2 small Vidalia onion, diced
2 large jalapenos, diced
2T chopped garlic
4T olive oil
1 tomato diced
1 avocado diced
1/3 bunch chopped cilantro
salt & pepper to taste

Fried up some corn tortilla chips to soak up some of the juices

I'm thinking some sweet corn and/or chopped pineapple would have been good also, but wanted to keep it simple this time. Bon apetit!

sounds good..now i just need the sea bass.

Good with almost any firm fish. I make it a lot with porgies and striped bass that are trimmed of red meat.

Did you leave the 1/2 onion sliced from step 1 in the mix or did you remove?

I threw out the onions from the marinade, and added new chopped onions.
