Dexter is OK but Victorinox knives are much better IMO.
https://www.swissarmy.com/us/en/Prod...le/p/5.3763.20 I fish up in MA & NH a lot and as you know Dexter factory is right up there in MA and promoted on a lot of the fleets and commercial boats. Many captains I fish with have switched to Victorinox knives simply because they have better edge retention and outlast Dexters. Sharpen a carbon DEXTER on a work sharp .
You won’t consider using any other knife . The edge lasts weeks between sharpening instead of a few fish like when using a steel or Accusharp . .
